Preheat your oven to 400° F. Line a cookie sheet with parchment paper.
In a large bowl, combine all of the ingredients until incorporated. Scoop out 2 tablespoons of the cookie dough and flatten slightly onto the baking sheet. Bake for 10-12 minutes or golden brown.
Notes
Use almond butter or peanut butter or sunflower seed butter.You can use honey in place of maple syrup.If you only have old fashioned oats or rolled oats, just pulse them for 5-10 seconds in a food processor to get that quick oats smaller consistency.
