Place your bread on a cutting board, take a small glass cup and use it to cut out a hole in each slice of bread.
On medium low, heat half a tablespoon of butter to melt. Add 2 slices of just the outside crust part of the bread to the pan. In the holes add like 5 or 6 mini pepperonis, then a little shredded mozzarella and then pour some of the beaten eggs. Top with your round cut out, press down gently and cook for a few minutes. Flip them over and cook for 2-3 minutes more. Transfer to a platter and repeat with the remaining toast and butter. Garnish with chili flakes.
