Preheat oven to 425 F. Pat dry your chicken pieces. Coat them in the oil. Then season both sides in the herb mixture. Transfer to a baking dish and roast for 20-25 minutes (time varies with thickness of meat).

Whisk together all the ingredients and taste. Adjust anything to your palate.
Salad:
Prep your salad ingredients first then leave the Halloumi for last. You want it to be warm when served.
Halloumi:
In a medium pan, heat the olive oil on medium heat. Once it gets hot, add in the cheese slices and cook for 1 to 2 minutes per side or until golden brown. Transfer to a plate and serve with your salad.
