Preheat oven to 425° F Line a baking sheet with aluminum foil.
Place beets, 1 tbs olive oil, salt & pepper to taste and toss with hands to fully coat. Fold foil up and form a closed packet. Roast for 45 minutes or until beets are fork tender.
If you use gold and red beets, roast them in separate packets since the red ones will discolor them if in contact.
