Preheat your oven to 400 F. Line a baking sheet with parchment paper.
In a large bowl, mix together the beaten eggs, chopped baby spinach, mint, onion and garlic. Toss in the meat, breadcrumbs, salt + pepper to taste and feta. Gently combine everything. Form medium sized meatballs.
Bake for 20 minutes or until internal temperature reaches 165 F.

You can also pan fry these in a few batches, in a pan coated with olive oil. Cook 8 minutes per side or internal temp reaches 165 F.Any ground meat can work here.You can use oats or almond flour instead of breadcrumbs.Serves great with Tzatziki sauce.
