Preheat your oven to 350℉ Line an 8x4 inch loaf pan with parchment paper.
Add all of the ingredients to a large bowl and combine until smooth - do not over mix. Bake for 40-45 minutes or until top is golden and toothpick comes out clean. Allow to set in the pan for 5 minutes then transfer to a wire rack to fully cool.
Notes
For the banana puree, you have to peel 3 or 4 bananas, add to a blender and pulse for a few seconds. Measure out the amount listed above. I needed 4 bananas pureed in a small blender and used the leftover puree for a smoothie.If you don't have self rising flour, simply use 2 cups flour, 1 tbs baking powder + 1/2 tsp salt.
