Best Mediterranean Chicken Marinades
Ingredients

lb
boneless skinless chicken thighs or breasts FOR EACH MARINADE,
sliced into strips
Italian Marinade:
3
tbs
pesto
1
medium
zucchini,
sliced into thick half moons
3
scallions,
sliced
Spanish Marinade:
1
red
bell pepper,
sliced into strips
1/3
cup
green olives
1
tbs
tomato paste
1
tbs
olive oil
3
cloves
garlic,
minced
1
tsp
Everything Bagel Seasoning
salt and pepper
to taste
Greek Marinade:
2
tbs
Greek yogurt
1
tbs
olive oil
zest
of half
orange
+ juice
1
orange
bell pepper,
sliced into strips
3
cloves
garlic,
minced
salt and pepper
to taste
French Marinade:
1
large
shallot,
sliced
1
tbs
Dijon mustard
1
tbs
honey
3
cloves
garlic,
minced
1
tbs
ginger
1
tbs
olive oil
Instructions
Marinate the chicken 30 minutes or up to overnight OR freeze the bags for a later date.
To BAKE: Transfer contents to a small baking dish and bake for 12-15 minutes at 425℉ (or until internal temperature of the chicken reads 165℉).
To PAN COOK: Just dump the contents into a hot pan and cook for 4-5 minutes per side. (I use this method usually).
