These fluffy little bites are a quick alternative to our favorite tiropita; Greek cheese pie. They come together in 5 minutes and are sure to be a winner at your next party!

large rimmed baking sheet
Large mixing bowl
Wire rack
Ingredients
1egg,lightly beaten
4tbsolive oil(or melted butter)
1/4cupGreek yogurt
1/2tsplemon zest
1/8tspdried mint
salt + pepper,to taste
5ozfeta cheese,crumbled
1/2cupshredded mozzarella
1cupself rising flour*
optional:toasted sesame seeds

Instructions
Preheat oven to 350℉. Line a large rimmed baking sheet with parchment paper.
In a large bowl, whisk together the egg, oil and yogurt until smooth. Add in the lemon zest, mint, salt, pepper, feta, mozzarella and mix to combine. Next SIFT in the flour and mix in to combine. Mixture will look dry but keep mixing to incorporate everything, you can use your hands if necessary. Form balls and press down slightly. Sprinkle tops with sesame seeds. Bake for 15-20 minutes or until golden brown on top.
Notes
*If you don’t have self rising flour use this instead:1 cup flour of choice with 1 tsp baking powder, 1/4 tsp baking soda and 1/2 tsp salt.
