In a large bowl, combine the squeezed out zucchini shreds, drained cottage cheese, eggs, breadcrumbs, grated cheese, scallions, italian herb blend, salt and pepper to taste. Form about 9 medium sized patties.
Heat a large skillet with 1 - 2 tbs olive oil. Once hot, add in the patties cook until golden brown, GENTLY flipping halfway through - about 4 minutes per side.
Optional: squeeze on some fresh lemon juice!
Notes
Store leftovers in an air tight container in your fridge and eat cold or reheat in a mini counter top oven~
