This broccoli chicken crust pizza has combined entree and side dish into one recipe. It's not only low carb and high protein - it's also crazy delicious!
Preheat oven to 425℉. Line 2 large rimmed baking sheets with parchment paper.
Steam your broccoli crowns whole for about 8 minutes or until fork tender. Transfer to a cutting board, remove the stem parts and snack on them. Chop the florets tiny. Transfer to a cheese cloth or thin and clean dish towel and proceed to ring out as much of the liquids as possible.
In a large bowl, add in your ground chicken, eggs, 1½ cups shredded mozzarella, broccoli, grated parmesan, garlic, salt, Italian herb blend, onion powder and mix until combined. Next, transfer half the mixture to the baking sheet and gently spread out into a round shape, packing it together. The crust should be about 1 inch thick. Bake for 22-25 minutes or until golden brown on top. Repeat with the remaining mixture on a separate baking sheet.
Assembly:
Once crust is done, remove from the oven and you may need to blot it with a paper towel if chicken has released any moisture. Sprinkle evenly with the remaining mozzarella and pepperoni. Pop back in the oven and BROIL for a few minutes or until cheese is melted and golden brown on top. Always watch your food closely when you turn on the broil function!
