Preheat air fryer to 380℉ for 8-10 minutes (or oven 425℉ for 10-15 minutes). Use parchment paper if you have it.
Slice the salmon into large cubes and coat with the olive oil. Next sprinkle onto the pieces the salt, garlic powder, onion powder, paprika and Italian herb blend to taste and toss to coat.
Mix 1/2 tsp salt into the panko breadcrumbs. Dredge the salmon pieces in the panko until well coated. Place them on the air fryer basket - do not overcrowd. Spray the top of the pieces with oil and cook for 5 minutes and then flip them over for another 5 minutes. (For the oven bake for 15 minutes, flipping halfway).
Yum Yum Sauce:
In a small bowl, add in mayo, honey, sriracha, lime juice and mix until combined. Taste and adjust flavors if needed.

Store leftovers in an airtight container in the fridge.
Replace panko breadcrumbs with crushed cornflakes or crushed tortilla chips.
