One of the best ways to add flavor and color to your dish is this pickled red onion topping. It’s prepared in 5 minutes with a marinate time of at least two hours, so prepare ahead. I prefer to leave mine in the vinegar for at least 24 hours to transfer the flavor into the onion fully and have it soften to my liking.

I like my pickled red onions kind of on the sweet and tangy side so I tend to add a heaping amount of the sugar listed. You can also add some peppercorns to this recipe.

  • 1 tbs salt
  • 1 tsp whole peppercorns

Instructions

  • Add your vinegar, sugar and salt to a small pot and bring to A NEAR boil.
  • Place your separated, sliced onions in a medium sealable and airtight container. Pour the mixture over the onions. Allow to come to room temperature – about 1 hour.
  • Seal and place in the fridge for at least an hour. I prefer to wait over night for best results.  Keeps for 3 weeks refrigerated.

Notes

Add more sugar if you prefer them sweeter.
