Preheat your oven to 375℉. Place all of the butter in an 8x8 baking dish and place the dish in your oven until the butter melts. Remove from oven and tilt the dish in all angles to butter the sides and bottom of the dish.
In a small bowl, toss your diced strawberries with 2 tbs sugar and set aside.
In a large bowl, whisk together the flours, 1/3 cup sugar, baking powder and salt. Pour in the milk and vanilla and mix to combine. Pour the batter into the baking dish and DO NOT MIX IT - leave as is. Next add the macerated strawberries evenly to the baking dish. Bake for 40-45 minutes or until golden.
Allow the cobbler to cool COMPLETELY for best results! We enjoyed it best the next day.
