Lighter Strawberry Cobbler
This is the ideal summer brunch dish your friends and family with devour!
This Strawberry Cobbler recipe is super simple to throw together in minutes. My only advice is to make it and let it set completely prior to serving it. The cobbler tastes so much better even the next day!
This recipe was inspired by my friend Kat Ashmore, when she posted, it looked so good, I knew I had to try it! Strawberries are in season and I knew this would be the best dessert/brunch for the summer!

Lighter Strawberry Cobbler
Equipment
Ingredients
- 3 tbs unsalted butter
- 3 cups diced strawberries (cores removed)
- 2 tbs sugar
- 1 cup all purpose flour
- 1/4 cup almond flour
- 1/3 cup sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375℉. Place all of the butter in an 8×8 baking dish and place the dish in your oven until the butter melts. Remove from oven and tilt the dish in all angles to butter the sides and bottom of the dish.
- In a small bowl, toss your diced strawberries with 2 tbs sugar and set aside.
- In a large bowl, whisk together the flours, 1/3 cup sugar, baking powder and salt. Pour in the milk and vanilla and mix to combine. Pour the batter into the baking dish and DO NOT MIX IT – leave as is. Next add the macerated strawberries evenly to the baking dish. Bake for 40-45 minutes or until golden.
- Allow the cobbler to cool COMPLETELY for best results! We enjoyed it best the next day.

Loved it and came out so good. The perfect balance of sweet and tart and I’ll definitely make again.
The only unbelievable thing about it is that it’s supposed to serve 9 people! No way hahaha. My husband ate half of it while it was still cooling in the pan but now thankfully the other half is safe in the fridge haha.
So easy! I tried it with raspberries but I’ll do strawberries next time. Very satisfying and summery!

I had to substitute a couple of things so my rating is based on this. I did not have any almond flour so only used all purpose flour @ 1-1/4 cups. I had to add blueberries to the strawberries to equal 3 cups berries and after macerating the berries did not have any white sugar left so used light brown brown sugar instead. With these substitute this turned out Excellent!!! There is zero left. Would definitely make again. Perfect for a picnic or cookout.

In baking the cobbler the day before enjoying, is it best to just cover it up and leave on the counter OR refrigerate overnight?

I made it yesterday and it came out really dry. I didn’t have almond flour so I added more regular flour. The batter was really sticky, I even added more milk and cooked for 45 minutes so I don’t know what went wrong.

It definitely should not have been dry. The batter needs to be runny like in the video. Maybe next time more milk and use only 1 cup flour

Hi Marie, I would recommend not thawing them and adding them straight from the freezer to avoid color leeching!
