Preheat your oven to 425℉. Line an extra large sheet pan with parchment paper.
Heat a large deep skillet to medium high and add the ground beef to the pan. Using a wooden spoon, break up the meat until its no longer pink - about 5-7 minutes. Use a paper towel to soak up any excess fat from the pan. Season with the spices listed above and pour in the chicken broth. Mix to combine. Cover the pan and lower the heat. Allow 4-5 minutes to soak up the broth. Next add in the juice and mix in 1 cup of the cheese into the meat until melted.
Add about 1/3 cup of the ground beef mixture to each tortilla half, sprinkle with a little more cheese and fold over. Repeat for all 8 tortillas. Brush the tops of tacos with olive oil and bake until crispy and golden brown - about 5-10 minutes. Serve immediately.
Serve with guacamole, pico de gallo and lime wedges.
