Preheat oven to 350℉. Line an 8x4 inch loaf pan with parchment paper.
In a medium bowl, whisk together the eggs, yogurt, strawberry preserves and vanilla until smooth. Next, add in the arrowroot powder and salt and mix together until incorporated. Transfer mixture to the loaf pan and top with frozen berries. Bake for 40-45 minutes or until a toothpick comes out clean. Allow to set in the pan for 15 minutes then transfer to a wire rack.
