Vegetable Egg Loaf (Low Carb)
Your new favorite anytime meal packed with fiber, nutrients and protein.
This Vegetable Egg Loaf incorporates some of my favorite ingredients to come together and form the ideal meal. I have it for breakfast on the go, dinner or a snack. I love to enjoy these slices with some seasoned avocado on the side.
You can customize this to include whichever vegetables you have on hand. The cottage cheese makes this recipe fluffy and hearty, so please do not skip it. You can use any shredded cheese you prefer, like cheddar or even throw in so me Greek feta cheese.

Vegetable Egg Loaf
Equipment
Ingredients
- 2 tbs olive oil
- 1 large zucchini, diced
- 1 large red bell pepper, diced
- 1 large carrot, fine dice
- 1 head broccoli, cut into small florets
- salt, pepper, garlic and onion powder to taste
- 7 eggs
- 1/2 cup cottage cheese
- 1 cup shredded mozzarella
Instructions
- Preheat your oven to 350โ. Line a 9ร5 loaf pan with parchment paper.
- In a large deep skillet, heat your oil on medium high. Add in the zucchini, carrots and bell pepper. Saute until slightly softened โ about 5 minutes โ stirring occassionally. Next add in the broccoli seasonings to taste. Saute the mixture for another 5 minutes. Transfer the mixture to your loaf pan and spread out evenly.
- In a bowl, whisk together the eggs and cottage cheese until smooth. Fold in the cheese and salt and pepper to taste. Pour this mixture into your loaf pan evenly. Bake for 50-55 minutes or until the top of the loaf is golden. Allow to set in the pan for 10 minutes then transfer to a wire rack to cool before slicing.

This keeps for about 4 days in the fridge
It is easy to cook, only I used 5 eggs (7 ones are too many, I thought)
I baked 45 minutes ( it depends on an oven).
This recipe is suitable when having guests- vegetarian or for a bigger company.

Hi Stella you and your recipes are such a blessing to me I am just starting out on your web sit and feel very blessed to be able to print your recipes off and also just increase the number to how many people I am feeding . So I want to make this veggie loaf but I am one that likes to prep ahead of time. I have 14 people coming for Fathers Day this Sunday can I make this on Friday and warm it up on Sunday on very low in the oven or I would love to know what you think I can do to be ready for my family on Sunday. Saturday I am having my Family fly in from Coast Rica that is why I am asking these questions as they will be here very late or early Saturday morning . So going to be trying the bake egg tortillas Saturday Morning after a go night sleep . I made this recipe (exactly as written) this morning and it turned out so beautiful & delicious!

12 grams of protein really isnโt very much. I learned from a dietician that youโre supposed to eat 30 grams of protein at every meal. Do you also have high-protein recipes?
Eat two servings, reduce yolks and replace with whites to your liking, add a scoop of egg white protein powder.
How many servings does this make?
