Easy Apple Banana Bread (No Sugar Added)
Ingredients
- 10 medjool dates, pitted
- 3 small bananas, mashed
- 2 eggs, lightly beaten
- 1/4 cup olive oil
- 1 tsp vanilla extract
- 1¾ cups flour, sifted
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 2 medium apples, peeled + grated*
Instructions
- Place your dates in a small bowl and cover them with almost boiling water for 20 minutes.
- Preheat oven to 350℉. Line an 8×4 inch loaf pan with parchment paper.
- In a mini food processor, pulse just the dates until a paste forms. You may need a tablespoon or 2 of the warm water to help break down the dates.
- Do not squeeze out any liquids from the grated apples. Should be about 1½ cups shredded apples.
- In a large bowl, whisk together the bananas, eggs, olive oil, vanilla and dates until smooth. Next, add in the flour, baking powder, baking soda, cinnamon, salt and mix together until incorporated. Fold in the grated apple. DO NOT OVERMIX. Then, transfer the mixture to the loaf pan and spread out evenly. Bake for 50 minutes or until toothpick comes out clean. Transfer to a wire rack to allow to cool completely.
Notes
- Store leftovers in an airtight container.
- If you want to make this gluten free, you can use gluten free all purpose flour or oat flour.
- Instead of olive oil you can use melted butter, avocado oil or any neutral flavored oil.
