Easy Pickled Red Onions
The ultimate tangy dress up of any taco, avocado toast or salad.
One of the best ways to add flavor and color to your dish is this pickled red onion topping. It’s prepared in 5 minutes with a marinate time of at least two hours, so prepare ahead. I prefer to leave mine in the vinegar for at least 24 hours to transfer the flavor into the onion fully and have it soften to my liking.
I like my pickled red onions kind of on the sweet and tangy side so I tend to add a heaping amount of the sugar listed. You can also add some peppercorns to this recipe.
Easy Pickled Red Onions
Ingredients
- 1 medium red onion, sliced thin
- 1 cup white wine vinegar
- 2.5 tbs sugar
- 1 tbs salt
- 1 tsp whole peppercorns
Instructions
- Add your vinegar, sugar and salt to a small pot and bring to A NEAR boil.
- Place your separated, sliced onions in a medium sealable and airtight container. Pour the mixture over the onions. Allow to come to room temperature – about 1 hour.
- Seal and place in the fridge for at least an hour. I prefer to wait over night for best results. Keeps for 3 weeks refrigerated.
Notes
Add more sugar if you prefer them sweeter.

I’ve just made these great looking onions but realised I’ve only added 1tsp salt instead of 1tablespoon….
Is it ok to add extra salt in the jar please? Liquid has only just gone in the jar with the onions

Sure add another 1/2 teaspoon of salt in the jar and swirl it around.
