Flourless Pumpkin Brownies (aka Lava Brownies)
These pumpkin bars are the perfect baked recipe because they are fluffy, chocolatey and delicious.
We love to make these every fall because they are the ideal segue into the autumn season. I still can’t believe summer is coming to a close but this recipe is a great way to jump into fall. These are an amazing back to school snack the kids will LOVE. It all happens in one bowl and in one step. You can’t beat that! Please remember to let them cool completely prior to slicing.

Flourless Pumpkin Brownies
Ingredients
- 1 cup almond butter (or natural peanut butter)
- 3/4 cup pumpkin puree
- 1/3 cup maple syrup (or honey)
- 3 tbs cacao powder
- 1 egg, beaten
- 1 tsp baking soda
- pinch of salt
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350° F. Line an 8×8" baking pan with parchment paper.
- In one bowl, mix all of the ingredients until just combined. Transfer batter to your pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool on rack prior to slicing.

9 servings or cut them into smaller squares and get 18.
can you use real peanut butter?
Hi Debby, I use the type of peanut butter where the only ingredient on the label is peanuts (and salt).

Made these as a treat to eat after dinner… Somehow, half of the pan was gone before dinner even started. My kids voted these the “best brownies EVER.” Some people will argue that they’re not that super healthy, all I’m saying is they’re better than any prepackaged stuff from the store. And yes, I’ll let my kids eat the leftovers for breakfast tomorrow, ha!

hi, how to do a pumpkin puree?
Hi Corz, I usually buy canned pumpkin puree at the super market. You can also just buy some squash and roast it in your oven to achieve the puree. I have also used sweet potato in this recipe and we love it!

These are truly amazing! Not too sweet, so the chocolate chips make it perfect. Kids gobbled them down and had no idea they were healthy. A great option for gluten free too. 100% adding it to my dessert rotation.

Just tried this recipe and we really enjoyed them. I switched out the choc. chips for dried cranberries and it worked quite well.

I’m double batching these. Do I cook the same amount of time?
Hi Yvette, it depends on the pan size. If you’re using a 9×13″ yes, the time will increase. If you are using two separate brownie pans, the time should not need adjustment.
