Pesto Egg Sandwich
A cute throwback to green eggs and ham!
This is not your average egg sandwich. A small change can make all the difference in an otherwise traditional tomato bacon and egg situation.
You can add in cheese but I didn’t find it necessary because of the flavor from the pesto and bacon. I also didn’t find it necessary to include a sauce because of the creaminess of the avocado. Feel free to add some Sriracha sauce though for that extra fire kick.
I purchase my pesto at Whole Foods. It is Gotham Greens brand and I cannot recommend it enough – delicious!
Pesto Egg Sandwich
Ingredients
- 2 eggs
- 1 heaping tbs pesto
- butter for your pan
- 1/2 small avocado, sliced
- 1/2 plum tomato, sliced
- 2 slices bacon, cooked
- 2 slices preferred sandwich bread
Instructions
- In a small bowl, combine the eggs and pesto – beat well.
- Melt your butter in a small non stick pan. Pour the egg mixture into the pan and lower the heat. Cook your eggs on low until done to your preference. I fold over the edges using my spatula, to create a smaller circle to fit my sandwich bread.
