4 Ingredient Broccoli Chicken Fritters (Low Carb)
I can’t say enough about this simple and delicious recipe! You will fall in love with these broccoli chicken fritters if you’re into meal prepping and having something quick to eat on the go or in your house with a salad or soup! They are not only low calories and carbs, they are also high in protein.
You wouldn’t think a recipe with only 4 main ingredients could be this good – but they are! If you prefer chicken breasts, switch those in instead. Just make sure they are cut into small cubes. If you like this recipe you will love my Broccoli Feta Fritters.

4 Ingredient Broccoli Chicken Fritters (Low Carb)
Ingredients
- 1½ lbs boneless skinless chicken thighs
- 1 medium head broccoli
- 1 cup shredded mozzarella cheese
- 3/4 tsp salt
- 1/2 tsp each paprika, garlic powder, onion powder + Italian herb blend
- 3 eggs
- 3 tbs olive oil, for pan
- Optional Dip: Lazy Tzatziki
Instructions
- Steam your broccoli crown in about 1 inch of water for 7 minutes or until fork tender. Move to paper towel and allow to cool slightly. Pat dry with towel. Next, chop them into tiny pieces.
- Slice you chicken into bite size pieces and add them to a large bowl along with the chopped broccoli, mozzarella, seasonings, eggs and mix until well combined.
- In a large skillet, heat 1-2 tbs of olive oil until hot. Working in batches, add about 1/4 cup of the mixture to the pan and flatten it out. Repeat but don't overcrowd the pan. Lower heat to medium-low and cook for 6 minutes per side. Lower heat if they are getting too brown. You want them golden brown and cooked inside.
Notes
- Store leftovers in an airtight container in the fridge.
- Use any shredded cheese you prefer.
- Use chicken breast or chicken thighs.
Looks good, but when did ten ingredients (and an optional 11th) become four? Do spices, oil and salt not count as ingredients now?
I tried this with ground chicken and this is the second recipe I tried using ground chicken. I am done using ground chicken. I will use chopped thighs next time. It was easy to put together and I might up the spices.
Watched you make these on Instagram. Easy to whip up and to make. Leftovers that should be great to reheat in the air fryer for a busy school-week night too. Was missing the dipping sauce, so will use to try these again with that. I think it would make it 5 stars.

So tasty! I subbed frozen cooked shrimp for the chicken (because that’s what I had on hand) and added half of a chopped portobello mushroom to the rest of the recipe ingredients. Turned out amazing! I used bottled Yum Yum sauce for dipping (again – that’s what was on hand). This should be printed with a caution that you’ll have to remind yourself to share!

I didn’t try the recipe yet so I can’t fairly rate it but it’s required in order to write a comment. I’d use Bell and Evan’s ground chicken in place of the thighs. I’d make the broccoli as instructed and then mix all the ingredients in with the chicken. Form patties and pan fry in a little olive oil. You can serve with a side noodles/pasta and/or a salad. You can also make burgers and put on a roll with her lazy tzatziki dip. Make as an appetizer using mini burgers and again dip in her tzatziki dip, ranch dressing, Alfredo sauce or marinara. So many options!

these were a huge hit in my house tonight with my husband and teen daughters. Made 1/2 the batch as fritters and the other 1/2 more of a scramble that my older daughter put over high protein pasta with some ranch dressing for more of a ranch pasta salad. Winner all around!
