Cheesy Vegetable Fritters
A cute little pancake that holds so much flavor and comes together in 15 minutes
I use these all the time in place of my sandwich bread. Some turkey slices, salami and cheese and I’m in heaven! I paired it with my favorite quick dip: my Lazy Tzatziki.

Cheesy Vegetable Fritters
Ingredients
- 2 large zucchini, shredded + squeezed of liquids (about 4 cups)
- 3 small carrots, shredded (about 1 cup)
- 1/2 medium red onion, fine chop (about 1/2 cup)
- 1/2 cup flour
- 1 tsp of each garlic powder, onion powder + Italian blend seasonings
- salt and pepper to taste
- 2 eggs, lightly beaten
- 1 cup shredded mozzarella cheese
- Dip: Lazy Tzatziki
Instructions
- In a large bowl, mix all of the ingredients until combined. Using a 1/4 cup measuring cup, spoon the packed mixture onto a hot lightly oiled skillet. Flatten them out with the back of your spatula. Cook for 3-4 minutes per side and golden.

Can oat flour be used?
I used all purpose flour, but you can use oat flour here.

Can you replace egg with flaxseed egg substitute. I prefer to use fresh garlic& Himalayan salt not garlic salt.

Can you make ahead and freeze them?
Definitely you can!
Taste great, But There is No way for me to get them done or chrispy and keep them in one piece in 15 minutes! It took me 45 minutes to peel and prepare the veggies by hand, second time I actually used a machine to shred everything, just that took 15 minutes, then about 30 minutes to frie in the pan.
Realistic time estimate is more useful for me. Love that You are positive:)

I had exactly the same experience, the taste is great But There is No way I could keep them in one peace, and the frying time to make the ingredients crispy is at least 20 minutes.
Can you bake them in the oven? Convection mode?
Hi Adrienne, Absolutely would work in the oven on convection mode… similar to an air fryer! I would do 400 F oven and around 25-30 minutes. Spray the tops lightly with olive oil too.
So glad you had this variation on here. I used my convection oven, and it worked great. I put them on parchment paper, sprayed with olive oil and flipped them over about 15 minutes in. Took the whole 30 minutes to get them all golden. I also did three that I had leftover and didn’t fit on my cookie sheet in a cast iron skillet on the stove, and they were amazing too.
I had two small zucchinis, so I added grated broccoli stalk and found some frozen edamame in the freezer, so I added that too. My husband and I both loved them!

I made the mixture ahead & put it in the fridge to chill. I also used a moulinex to shred the zucchini. They turned out great!! This will become a staple for our family, as my husband is diabetic. Thank you, it’s an awesome recipe!

Made this last night and it’s off the hook delicious! I’m on a low carb diet, so I swapped out the flour for half almond flour, and half Fiber Gourmet’s new low carb flour (awesome) and it was killer (still will experiment). I also added in Herbs De Provence which gave it a nice kick. I also had a prob keeping these fritters from falling apart in the pan, but it was no biggie, I think they don’t want to tighten up till they start to cool. I think perhaps in the future I will make this recipe as a hash side dish (like corned beef or home fries). Will taste the same and cook faster! Thanks!
