Greek Roasted Beet Salad (Patzaria Salata)
A perfectly put together beet salad with all the right stuff.
Another Mediterranean gem that is the coziest salad. The roasted beets are so meaty and yet so healthy. And all of the other ingredients are the best accompaniments to them.
The sweetness of the orange slices with the tanginess of the pickled red onions and the creamy saltiness of the feta cheese. And lets not forget the crunch of the almonds. so refreshing and nutritious. Such an amazing combination.
Pour on your olive oil and balsamic vinegar and toss to coat all ingredients. Serve with some crusty bread alone or with a nice steak or grilled chicken or fish.
Greek Roasted Beet Salad
Ingredients
- 1.5 lbs beets, rinsed, stemmed, peeled + sliced into small pieces
- 2 tbs olive oil, divided
- salt + pepper
- 1/2 cup feta cheese, crumbled
- 1/4 cup slivered almonds
- 1 orange, segmented (skin removed)
- balsamic vinegar, salt + pepper to taste
- pickled red onions
- garnish: fresh chives
Instructions
- Preheat oven to 425° F Line a baking sheet with aluminum foil.
- Place beets, 1 tbs olive oil, salt & pepper to taste and toss with hands to fully coat. Fold foil up and form a closed packet. Roast for 45 minutes or until beets are fork tender.
- If you use gold and red beets, roast them in separate packets since the red ones will discolor them if in contact.
