Easy Mango Blender Cake

  • Preheat oven to 350℉. Line an 8×4 inch loaf pan with parchment paper.
  • In a mini food processor, pulse together the mango pieces, eggs, olive oil, sugar and vanilla until smooth. Pour the mixture into a large bowl. Sift in the flour, baking powder, baking soda, salt and mix together until JUST incorporated. Transfer mixture to the loaf pan and spread out evenly. Bake for 35-40 minutes or until toothpick comes out clean. Let it set in the pan for 10 minutes and then transfer to a wire rack to allow to cool completely.

Icing:

  • In a small bowl, whisk together the powdered sugar and lime juice until smooth. If glaze is too thin then add in more powdered sugar to thicken it out. Drizzle on top of cake.
