These marry me brownies will satisfy all of your Mediterranean flavor cravings in a delicious and easy way!
Despite their sweet sounding name, “Marry Me” Brownies swap out chocolate and sugar for an intensely savory, Tuscan inspired bite. They earn their moniker from the same bold, irresistible flavor profile that made Marry Me Chicken famous a rich, sun drenched combination of sun dried tomatoes, tender spinach, and sharp scallions.

The magic lies in the luxurious interplay of cheeses and fresh herbs packed into every square. Tangy, creamy goat cheese and gooey, melted mozzarella fold seamlessly into a light batter of eggs, rich olive oil, milk, and flour.

Perfect as a crowd pleasing appetizer, a savory brunch centerpiece, or a grab and go snack, these savory brownies are practically impossible to resist. Each slice concentrates the warmth of Mediterranean cooking into a neat, sliceable bar that melts in your mouth.

Marry Me Brownies
Ingredients
- 2 tsp olive oil
- 4 scallions, diced
- 5 oz (140 g) baby spinach, rough chop
- 2 eggs, lightly beaten
- 1/4 cup (55 g) olive oil
- 1 cup (235 ml) milk
- 1 cup (125 g) flour
- 1 tsp baking powder
- 1 tsp salt
- 1/3 cup (35 g) sun dried tomatoes, sliced + packed
- 4 oz (115 g) goat cheese, cubed
- 2 tbs fresh dill, chopped
- 1 cup (110 g) shredded mozzarella
- 1 tbs grated parmesan cheese
Instructions
- Preheat oven to 375℉. Lightly spray an 7×11 inch baking dish with olive oil.
- Heat 2 tsp olive oil in an 12 inch skillet over medium heat. Sauté your scallions for 1 minute. Sauté your spinach until mostly wilted for about 2 minutes. Season with salt to taste. Remove to a colander to drain and pat dry with paper towels to remove excess liquids.
- In a large bowl, whisk together the eggs and olive oil. Next, whisk in the milk until combined. Then, sift in the flour, baking powder, salt and mix until just incorporated. Fold in the spinach mixture, sun dried tomatoes, goat cheese, dill, and mozzarella. Transfer mixture to the baking dish and spread out evenly. Sprinkle with parmesan cheese. Bake for 45-50 minutes or until golden brown on top. Allow to cool for 15 minutes.
