Crispy Parmesan Carrot Sticks
This is the only way I’m consuming carrots from now on.
These were so delicious and easy to make in under 30 minutes. Simply peel your carrots and slice them into 3 pieces (2 pieces if they’re short carrots). Then slice those smaller pieces in half lengthwise so that each piece has a flat side. Mix up the oil mixture and coat the vegetables in that. You can just as easily roast them like this, but the level up of dipping them in the freshly grated parm is incredible.

Crispy Parmesan Carrot Sticks
Ingredients
- 1 lb carrots, medium or large sized
- 2 tbs olive oil
- 4 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 1/2 heaping tsp each paprika, chili powder, onion powder + Italian herb seasoning
- salt to taste
- 3/4 cup freshly grated parmesan
Optional Dip:
Instructions
- Preheat oven to 425℉. NO PARCHMENT for your baking sheet here.
- Slice your carrots into 3 INCH long pieces and then slice those in half lengthwise so there is a flat side to each piece.
- To a large bowl, add the olive oil, garlic, 1/4 cup grated parmesan, spices and salt to taste. Toss and coat everything with your carrot pieces.
- House the freshly grated parmesan in a shallow small bowl and dip the flat cut side of each carrot into the cheese. Transfer each piece, spaced out, onto the baking sheet, cheese side down. Roast for 20-25 minutes or until tender. Time will vary with the size of your carrot pieces.

Parmesan cheese is mentioned twice. Is there supposed to be another type of cheese?

Yes, in the oil mixture I used store bought grated cheese, it holds up better. For the last step “DIPPING” into the cheese, I used freshly grated cheese.

Why no parchment paper?
Hi Susan, the contact with the baking sheet is what creates the crisp. You can definitely still use parchment and they will still be delicious – just less crispy! Enjoy!
Do you spray the baking sheet first? With non-stick spray?
I did not spray the pan. You can but there is oil in the coating of the carrots and that does the trick!
I did it both ways, cause I didn’t notice the no parchment thing until the first pan went in. 🤷♀️. The parchment made the cheese disappear. The pan made the cheese crispy. Definitely go no parchment.

Would lining the baking sheet with tin foil have the same negative effect?

Can these carrots be made in the airfryer? If so, what temp and for how long?
400F 8 minutes, flip, another 8 minutes
I did some in the air fryer. 400 for 12 mins . for it was starting to look burnt, didn’t come out as crispy but still good. Carrots roasted in oven came out perfect!

What other dips would be good with these? I’m making them for a dish to pass at a family dinner and was thinking of having a couple dipping options but wasn’t sure what to go with.

Do I preheat the oven to 425 with bake? My roast setting only goes up to 400 I guess I’m just not sure exactly what setting to use?

I lost half the carrot and the Parmesan on the baking sheet. It’s gonna take me a week to scrape that off. Do yourself a favor and YES TO PARCHMENT PAPER!
Same result with sticking to the baking sheet. Delicious but wow what a mess to clean up.
I had a jar of pesto so I used that to cover my carrots and bought shredded parmesan instead. Found that the cheese wouldn’t stick so I made lines of cheese on my pan and placed the carrots on top which worked great.
Next time I’ll shred my own. This was delicious, no need for dip.

I made this recipe and it was delicious but my problem was a lot of my cheese stuck to the bottom of the pan and then when I tried to scrape it off it just all curled up off the carrot. but those that still had the crust on them was delicious. Is there anything I can do to prevent it from sticking?

Yes! they don’t come out as crispy! But feel free to make them with parchment – they will still be great!

Yes, but will probably take a little bit longer to roast!

HI Jan, there is oil in the mixture that the carrots are coated with so I did not include more oil on the pan. You can also make them with parchment next time – they’ll still taste great!

So, I accidentally used asiago parmesan cheese and the taste was a bit bitter…do you think it’s because I didn’t use the right kind of cheese?
I’m so sad. I was looking forward to these in a BIG way. I followed the recipe exactly but at the end of the cook, the carrots were just stuck to the pan and the cheese was burnt on the pan. The carrots still tasted good but the cheese was a bust. Oh well.

Not sure why the recipes specified no parchment paper. Definitely need to use it.
Hi Luke, you can alwasy use parchment paper, I suggested to not use it to get a crisper texture on the carrots. I had no problem washing my pan afterwards. I’m very sorry though if the dish didnt work out for you.

I made these 2x and both times they stuck to the pan so much I could barley get them off and cleaning the pan was almost impossible. We loved them but the sticking is out of hand. HELP.
Hi April, I’m sorry for the stick, some of mine stuck as well and i used a metal spatula to get them up. My advice is to use a non stick pan or use parchment paper!

I have made this two separate occasions. The first time I used parchment paper and they came out SO crispy and so so good. The second time (tonight) I spent so much time grating Parmesan cheese and cleaning my carrots, shaving them. I saw that she said to not use parchment so I used aluminum & some spray. Well after twenty five minutes I took them out and they were stuck! So stuck in fact I would try to use a spatula to scrap them off and some of the aluminum would come off with it.
Next time parchment paper will be a must because it was so messy, time consuming and frustrating to have to scrape off all my hard work & little of the cheese stayed with it.
These were sondelious. I ate almost a pound of carrots. Follow recipe as written…we found after roasted I moved them to a plate , dusted with a little salt… let the cool a little as the bottoms crisp up and are even more delious❤️❤️❤️A keeper and repeater❤️❤️❤️

So disappointed! I did exactly what you said and they didn’t even look like yours. Shriveled up. The last dip of parm didn’t stick. But, the carrots are glued to the backing dish.

Absolutely delicious. I barmixed shaved Parmesan, gave a rough covering on the carrots with lots of sticky cheese to eat! They are on my Christmas dinner menu this year!

Made them on a baking tray without parchment paper and they just stuck to the tray so the burnt cheese stayed on the tray while I tried to scrape them off. Now I have a tray with a lot of burnt cheese, but not much on the carrots.

I have made this recipe twice. The first time I used all fresh grated parm. The second time I used store grated for the mixture and fresh for the dipping. Plus I added Brussel sprouts to the mix.
The first time they came out incredible. I mean addicting even. I told my husband I could eat these and leave fries alone.
