Sheet pan smashed chicken gyros are the ultimate weeknight hack for anyone craving Mediterranean flavors without the mountain of dishes. By spreading ground chicken seasoned with garlic, oregano and onion powder directly onto a sheet pan and pressing it flat, you create a thin layer that bakes up incredibly fast.

The chicken juices mingle with the heat to create those coveted crispy edges that mimic the texture of a traditional vertical rotisserie.

While the “smashed” chicken bakes, you can toss a handful of frozen French fries onto another pan but the same oven, to get everything hot and golden at once. This streamlined process transforms a typically labor intensive street food into a hands off meal, allowing the oven to do all the heavy lifting while you prep your fresh toppings.

Once the chicken is browned, assembly is a breeze. Swipe the chicken with cool, creamy tzatziki sauce and pile on the crispy French fries. Top the gyro with a vibrant mix of halved cherry tomatoes, thinly sliced red onion, and a generous sprinkle of fresh parsley (and more tzatziki of course)!

Sheet Pan Smashed Chicken Gyros
Ingredients
- 6 medium flour tortillas
- 1 lb (0.45 kg) ground chicken
- salt, garlic powder, onion powder + dried oregano, to taste
Assembly:
- 1/2 small red onion, sliced thin
- 1 pint cherry tomatoes, halved
- 3 tbs fresh parsley, chopped
- 14 oz (0.5 kg) frozen french fries, baked
- tzatziki
Instructions
- Preheat oven to 425℉. Line a large rimmed baking sheet with parchment paper.
- Place the tortillas onto the pan using about 1/3 cup of ground chicken on each tortilla and flatten the chicken out thinly and evenly, all the way to the edges of the tortilla. Sprinkle with salt, garlic powder, onion powder and oregano generously. Bake for 15-17 minutes or golden on the edges.
Assembly:
- Spread each taco with tzatziki, then top with cherry tomatoes, red onions, french fries, more tzatziki and parsley. Fold and enjoy!
Notes
- Store leftovers in an airtight container in your fridge for up to 4 days.
- You can use any ground meat like ground pork, ground turkey, ground beef or ground lamb.
- I used 6 inch flour tortillas in this recipe.
Definite winner. The ground chicken can be easily spread out with a spatula. Did the fries separetly in the toaster oven.

This recipe was a huge hit with my family. I didn’t expect much from the ground chicken, but boy was I wrong! I did mix the spices into the mixture because my husband had already placed the chicken in a bowl, and sprinkled extra marjoram on top. I also used a burger press to ensure the meat was even. Everyone, from kids to grandparents, expect this in the rotation regularly.

This recipe sounds very appealing to me and it also seems that it is easy to prepare. I do have a question however and that is would it change the recipe in any substantive way to just mix all the seasonings into the ground chicken or is there a benefit to just sprinkling them on top of the meat?
Hi Cindy, You can definitely mix in seasonings into the meat however, there is no reason to dirty those extra bowls.
They season up beautifully with the top sprinkle! But always do what you feel is best in your kitchen!
