Love how easy this recipe is with a only a few ingredients we all tend to have in our fridges and who doesn’t need a delicious tortilla recipe that’s gluten free? You can add in whatever you like, avocado, ground meat, salsa, etc.
My main takeaway from this recipe I want you to note, is that if you see any liquids in the bottom of your bowl after you’ve mixed the ingredients, just use a paper towel to absorb it. Also, make sure your don’t flatten them too much and make them too thin or they will fall apart on you.

Low Carb Cheesy Carrot Tortillas (Gluten Free)
Ingredients
- 3 carrots, shredded (2½ cups)
- 1½ cups shredded mozzarella cheese
- 3 eggs
- 1/2 tsp each paprika, onion powder, garlic powder, salt
- black pepper to taste
- 1 tbs olive oil
Assembly:
- baby arugula
- cherry tomatoes, sliced
- sliced turkey or ham
- spicy mayo
Instructions
- In a large bowl, combine the shredded carrots, shredded cheese, eggs, seasonings and mix to fully incorporate all. If any excess liquids appear, use a paper towel to absorb them.
- In a large pan, heat the olive oil on medium high. Once hot add 1/2 cup of the mixture and pat down gently to spread it out. Use the back of the spatula to do this and to form a round shape of your flat tortilla (doesn't have to be perfect). TRY NOT TO MAKE THEM TOO THIN OR THEY WILL FALL APART. Cook for 3-4 minutes, then flip CAREFULLY and cook another 3 minutes. Lower your heat if they are getting starting to get too brown.

This is delicious! but it didnt come out as a strong one piece tortilla. i didnt make them thin and it still came apart. what is the trick?
