Ground Beef Tortilla Roll Ups
Ingredients
- 6 burrito size flour tortillas
- 2 lbs (0.90 kg) ground beef
- 1 small onion, fine diced
- 1 small bell pepper, fine diced
- 3 tbs parsely, chopped
- 1½ cups (110 g) shredded mozzarella, divided
- 2 tsp salt
- 1 tsp each garlic powder + onion powder
- 1/4 tsp paprika
- 1 tbs olive oil, for brushing
Sauce:
- 3 tbs ketchup
- 6 tbs mayo
- 1/2 tsp garlic powder
- salt, to taste
Instructions
- Preheat oven to 420℉. Spray or brush your 7×11 baking dish with olive oil.
- In a large bowl, mix together the ground beef, onion, pepper, parsley, 1 cup shredded mozzarella, salt, garlic powder, onion powder and paprika. Evenly divide the meat mixture amongst the tortillas. Thinly spread it out with your fingers to reach the edge of each tortilla as best as you can. Roll them tightly and then cut them into 2½ inch long rolls. Place the rolls onto the baking dish meat cut side up and lightly brush with olive oil and bake for 25-30 minutes. Top with mozzarella cheese and pop back in the oven until melted. You may want to broil them at the end for 2-3 minutes, make sure you watch them during this time.
Dip/Sauce:
- In a small bowl whisk together the ketchup, mayo, garlic powder and salt until smooth. Serve sauce with roll ups.
Notes
- Store leftovers in an airtight container in your fridge for up to 4 days.
- You can use any ground lamb, ground chicken, ground turkey or ground pork instead of ground beef.
- You can leave out the shredded cheese if you prefer.
- You can use any type of shredded cheese you prefer.
