15 Minute Smashed Cheeseburger Tacos
Ingredients
- 6 medium flour tortillas, 6 inch
- 1 lb (0.45 kg) ground beef
- salt, to taste
- 6 slices cheddar cheese
- 1/2 cup (70 g) pickles, chopped
- 4 slices bacon , cooked (optional)
Special Sauce:
- 1/3 cup (75 g) mayonaise
- 1/3 cup (80 g) pickle relish, drained
- 3 tbs ketchup
- 1 tsp white wine vinegar
- 1 tsp honey
Instructions
- Preheat oven to 420℉. Line a large rimmed baking sheet with parchment paper.
- Place the tortillas onto a flat surface (I used the baking sheet). Use about 1/3 cup of ground beef on each tortilla and flatten the ground beef out thinly and evenly. Sprinkle each with salt to taste.
- Heat a long griddle pan over medium-high heat and place the tortillas meat side down first. Using a spatula, press them down for a few seconds to sear. Cook for 2-3 minutes, then flip them over and cook for another 2 minutes. Transfer them to the baking sheet. Place the slices of cheddar cheese on top of the meat. Pop into your preheated oven for 2 minutes or until cheese is melted. Remove from the oven. Top with bacon, pickles and the sauce. Fold and enjoy!
Sauce:
- In a small bowl, whisk together all of the sauce ingredients listed above until incorporated.
Notes
- Store leftovers in an airtight container in your fridge for up to 4 days.
