Moist Apple Cake with Cinnamon Icing
Equipment
- small mixing bowl
Ingredients
- 2 eggs, lightly beaten
- 1 cup applesauce
- 3 tbs olive oil
- 1 tsp vanilla extract
- 1¼ cups all purpose flour, sifted
- 2 tsp baking powder
- pinch salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- pinch ground ginger
- pinch all spice
- 2/3 cup sugar
- 1½ cups honey crisp apples, peeled + chopped
Cinnamon Icing:
- 1 cup powdered sugar
- 2 tbs milk
- 1/4 tsp cinnamon
Instructions
- Preheat oven to 350℉. Line an 8×8 inch brownie pan with parchment paper.
- In a large bowl, add in the eggs, applesauce, olive oil, vanilla and whisk together until combined. Next, add in the flour, baking powder, salt, cinnamon, nutmeg, ginger, all spice, sugar and mix together until incorporated. Fold in the apple pieces. Then, transfer mixture to the pan and spread out evenly. Bake for 30-35 minutes. Allow to cool completely before adding the icing. Poke some holes halfway through the cake. Add the icing on top.
Cinnamon Icing:
- In a small bowl, add in the powdered sugar, milk, cinnamon and mix until combined. Taste and adjust if needed.
Notes
- Store leftovers in an airtight container.
- You can sub in Gluten Free all purpose flour OR you can use oat flour.
- This cake can be DAIRY FREE if you leave out the icing or just use a non-dairy milk for the ICING.
