Simple Apple Sheet Cake
Equipment
Ingredients
- 2 eggs
- 1/2 cup sugar of choice
- 1/2 cup milk of choice
- 3 tbs olive oil (or melted butter)
- 1 tsp vanilla extract
- 1¼ cups flour of choice
- 1½ tsp baking powder
- 1/2 tsp cinnamon
- 4 medium apples, cored + cut into small slices*
- Optional: powdered sugar to garnish
Instructions
- Preheat your oven to 350℉. Line a 9×13 inch pan with parchment paper. I used butter to lightly grease the parchment. You can also spray with oil.
- In a large bowl, beat the eggs with the sugar for a few minutes. Add in the milk, oil and vanilla and incorporate. Sift in the flour, baking powder and cinnamon. Mix to combine until smooth.
- Add the apple pieces to your prepared pan and spread out to an even and mostly flat layer. Pour the batter evenly over the apples and use a rubber spatular to spread out as best you can. Bake for 25-30 minutes. May need to broil for a minute or two to get some color on top. Allow to cool and then sprinkle with some powdered sugar to garnish.
Notes
*I would use Fuji or HoneyCrisp apples here – something sweet. You can peel the apples or leave the skin on. I left the skin on.

I made this invisible apple bread and used 4 Fuji apples. Did not have enough liquid to cover the top. I didn’t use a mixer but I might the next time.
Made it with almond milk and almond flour. The batter was wet after cooking. It was tasty but not sure why it didn’t set
Hi Stella! My cake is in the oven as we speak (I really hope it turns out well! fingers crossed) In the meantime, I wanted to ask if you have the measurements in grams by any chance? I just find it easier to follow as I don’t have a measuring cup, just a kitchen scale. Thank you so much! x
I tried this today and it was a hit! I just love, love, love it! It was super easy and the direction was easy to follow. And I had all of the ingredients on hand. Now, this is going to be my go to dessert. Thanks!

This is great easy and delicious recipe! My 9 yr old granddaughter and I made it this morning, I think we could’ve eaten the whole thing!
Hi Susie, glad you and your granddaughter enjoyed the recipe! Thanks for sharing!
Looks amazing, my kids are going to devour this! Does it freeze well?
Hi Erica, I haven’t frozen it but I dont see why not!
Awesome and quick snack
Hi Yolanda, glad you enjoyed the recipe! Thanks for the kind rating!
I bake this cake today. Besides that it was so easy to prepare it was very delicious, soft and not so sweet just enough sweetness and the kids love it which is good, for sure would make it again
Hi Laura, glad the kids enjoyed and thanks so much for trying the recipe and your kind feedback!
I made this last night. LOVED IT!! As a weight watcher, I subbed out the regular sugar for the Truvia Sugar Blend to save points. This is the EASIEST apple cake recipe in that I used an apple corer/slicer and had apples preparerd in three minutes. The batter is so easy. I also used TRUVIA confectionary sugar on top (zero points) and it was perfect. It baked beautifully and was soooo delicous. This recipe is a keeper!
I am wondering if I can sub out the oil for apple sauce?
Hi AnnMarie, Thanks so much for sharing your feedback with the recipe – super helpful for other readeers!
That would probably work with applesauce instead of oil.
Made this today with a gluten free flour blend mix and it was wonderful! Worth printing this off for the binder 😉
Hi Mel, thats awesome! So glad you tried it and liked it!
This looks amazing. Can I use almond or coconut flour instead of regular flour. Will I have to add anything else?
I have to eat gluten free and low carb .
Thank you.
Hi Rosa, Thank you! You can use almond flour in this recipe, with a few tablespoons of coconut flour added to it as well, for the absorption! Enjoy!
