Spicy Salmon Rice Muffins
These bite sized sushi rice muffins were gone in minutes. My family loves sushi but I hate paying $20 per roll at the restaurant since my kids need at least 2 rolls to feel full. Yes they love to eat. This is basically a delicious alternative with a fraction of the cost.

Spicy Salmon Rice Muffins
Equipment
Ingredients
- 3 sheets nori paper
- 1½ cups cooked sushi rice, cooled
Salmon:
- 1 lb salmon, skin removed + cubed small
- 2 tbs sesame oil (or olive oil)
- 1 tbs low sodium soy sauce
- 1 tbs honey
- 2 scallions, diced
- 1/2 tsp each garlic powder, onion powder, chili powder, paprika, dried oregano
- salt to taste
Spicy Mayo:
- 1/4 cup kewpie mayo
- 2 tsp Sriracha sauce
- 1 tsp honey
Toppings:
- 1/2 avocado, diced small
- 2 tsp black sesame seeds
Instructions
- Preheat your oven to 400°F. Grab a scissor and cut your nori sheets into four equal squares.
- Toss your cubed salmon in a bowl with all of the rest of the salmon ingredients and coat. Marinate for up to 4 hours.
- To each nori square, add about 1 heaping tablespoon of rice and spread out slightly. Transfer the square to your muffin slot, pushing down gently to center the rice in the middle with the edges coming up along the sides of the slot. Grab out 4-5 salmon cubes and fill each muffin slot. Transfer the pan to your oven and bake for 15-17 minutes. Broil, if needed, at the end, to get a little tan on the salmon .. 1-2 minutes.
- Remove allow to cool slightly and top with your avocado, sesame seeds and drizzle of spicy mayo.
Spicy Mayo:
- In a small bowl, mix the kewpie mayo, sriracha and honey. Taste and adjust if needed.

ok. what did i do wrong. all soft and not crunchy. can’t get them out of the tray without failing apart. do you need a picture? so sorry. i was very excited and followed the recipe.
This is the first recipe from your website I tried, months ago – and to this day it remains my ABSOLUTE favourite, not only compared to your other recipes but to all I’ve ever tried. Easy preparation, simple ingredients, but what a taste! Something like sushi 2.0.
(The only thing I changed is the mayo, as I don’t particularly like the taste of kewpie mayo, nor spiciness. That also slimmed down the calories, haha: kewpie mayo, honey, vinegar – so good! :))

5/5 – Loved it! I also added cucumber for some freshness. Maybe it’s my oven but I think 12-13 minutes would be the perfect time for the salmon as it came out slightly overdone.

wasn’t pleased with it sticking to the pan. we added cucumbers as well at the end it ended up like a mixed salad.

looks good! is the nutrition info per serving, and what is serving size?
When I happened upon this recipe I knew I was going to “love” it. Sadly missed the mark for me. I followed the recipe and only change was I used white toasted sesame seeds. I thought it lacked flavor despite the marination time and for me definitely not what I would call “spicey”. I decreased the baking time to 10 min and then under broiler for 2 min probably should have baked for 8min then under broiler for 2. As with many foods the degree of “doneness” is an individual preference. Unfortunately I will not be making this recipe again as I just didn’t enjoy it.
Only thing I’d change is swap mayo for greek yogurt for a healthier dish. otherwise incredible!! The salmon is just delicious!!
How big should the salmon cubes be? I can’t find it
