This recipe is proof that you don’t need a lot of time or ingredients to make yourself a healthy, delicious and high protein breakfast/snack. Of course, you can add more into these to jazz them up but eating them just like this is absolutely recommended as well.

Next time I make these I think I will add in some shredded mozzarella with the feta. They are perfect for meal prepping for the week.

4 Ingredient Spinach + Feta Egg Cups (Gluten Free)
Fast, cute and delicious is what’s for breakfast, all in these gluten free, 4 Ingredient Spinach and Feta Egg Cups.
Ingredients
- 6 large eggs
- 1/2 cup feta cheese,, crumbled
- 2 tsp baking powder
- salt and pepper, to taste
- 1 handful baby spinach,, rough chop
- Sriracha, (optional)
Instructions
- Preheat your oven to 350° F. Spray a muffin tray with olive oil.
- In a large bowl beat your eggs well. Mix in the feta, baking powder, salt and pepper to taste. Add sriracha sauce if you like. Lastly fold in the baby spinach. Fill up 7 of the muffin slots with the mixture and bake for 20-25 minutes or until golden brown on top.
