5 Ingredient Banana Bread Muffins
A flourless and refined sugar free breakfast or snack win.
This recipe is as simple to make as a smoothie. Toss all your ingredients in your blender and process until smooth yet chunky. The dates will represent the chunk part. You can sub in oat flour, chop the dates up and mix this in a bowl if you don’t have a blender or food processor.
The texture is superb for such few ingredients and no flour or refined sugar. The banana acts as a binder, sweetener and gives the muffins their moisture. The dates add a little bit of natural sweetness. You can absolutely skip the chips on top and still be happy with this. Such a big fan of this recipe from Pinch of Yum!
5 Ingredient Banana Bread Muffins
Ingredients
- 2 cups rolled oats
- 3 ripened bananas
- 2 eggs
- 6 dates, pitted
- 1 tsp baking soda
- 1/4 tsp salt
Optional:
- 1/2 tsp cinnamon (add in batter)
- 1/3 cup mini chocolate chips (topping)
Instructions
- Preheat your oven to 350° F. Line a muffin tray with muffin liners or spray with coconut oil.
- Add all of the ingredients to your blender or food processor and process until smooth and chunky.
- Transfer/pour the batter to your muffin tray and bake for 15-17 minutes or until toothpick comes out clean.
Notes
Chocolate chips on top are optional. You can also add on walnuts, blueberries, seeds or leave them plain.

Great recipe! Are the chocolate chips folded into the batter or placed on top after baking?
I made this today for my son to take as snacks to school for the week and it was absolutely delicious. I like that it doesn’t use flour and sugar which makes it healthier than the regular muffin. i included chocolate chips, raisins and chopped walnuts as toppings. my son loved it.

Hi Claudia, You should try the apple muffins. Same base recipe but instead of bananas you’re gonna utilize those apples. I actually prefer it to the banana version. Hope you guys enjoy! LInk below:
