This recipe is as simple to make as a smoothie. Toss all your ingredients in your blender and process until smooth yet chunky. The dates will represent the chunk part. You can sub in oat flour, chop the dates up and mix this in a bowl if you don’t have a blender or food processor.
The texture is superb for such few ingredients and no flour or refined sugar. The banana acts as a binder, sweetener and gives the muffins their moisture. 5 Ingredient Banana Bread Muffins
- 2 cups rolled oats
- 3 ripened bananas
- 2 eggs
- 6 dates, pitted
- 1 tsp baking soda
- 1/4 tsp salt
- Preheat your oven to 350° F. Line a muffin tray with muffin liners or spray with coconut oil.
- Add all of the ingredients to your blender or food processor and process until smooth and chunky.
- Transfer/pour the batter to your muffin tray and bake for 15-17 minutes or until toothpick comes out clean.
