Healthy Mediterranean Lentil Bread (Gluten Free)
For a flourless bread loaf recipe, the texture of this bread is incredible. You would not believe that it does not contain flour. We love that it is packed with many vitamins and nutrients thanks to the healthy ingredients like lentils, eggs, olive oil and Greek yogurt. I like to eat this with some of my Lazy Tzatziki spread or just on its own.
I used a bag of Organic Red Lentils, rinsed them really well and soaked them overnight. I’m not gonna lie, getting them smooth with the hand immersion blender was not quick but it was effective. Next time I will probably use a food processor for that step!
Do not skip the salt, it is necessary for flavoring of the entire bread. The creamy Greek feta cheese, olives and dill all help in that department too. So basically if you’re looking for a healthy alternative to bread, this recipe is definitely for you!

Healthy Mediterranean Lentil Loaf
Ingredients
- 2 cups red lentils, soaked overnight
- 1/2 cup Greek yogurt
- 3 eggs
- 1-2 tsp salt
- 5 tbs olive oil
- 1/3 cup crumbled feta cheese
- 1/4 cup chopped Kalamata olives
- 2 tbs chopped fresh dill
- 2 tsp baking powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbs sesame seeds (optional topping)
Instructions
- Preheat the oven to 350℉. Line a 9×5 inch loaf pan with parchment paper.
- Drain and dry your lentils as best you can.
- If you're using a hand immersion blender then add the soaked lentils, yogurt, eggs and salt to a large bowl and stir until incorporated and mostly smooth. You can also add these ingredients to a food processor and blend until mostly smooth. Then transfer the mixture to your bowl.
- Next add to the bowl your oil, feta, olives, dill, baking powder, seasonings and mix to combine. Transfer the batter to your loaf pan and bang the pan lightly on your counter to eliminate air bubbles. Sprinkle top with sesame seeds evenly and bake the loaf for about 50-1 hour, or until toothpick comes out clean. Let it set in the pan for 10 minutes then transfer the loaf to a wire rack to cool completely.
This ‘bread’ is the best thing I’ve esten in ages. I would never have realised I was eating lentils. It can be a little bit dry but it makes me drink lots of water with it so that’s good too. I am gonna experiment with sun dried tomatoes and capers and different herbs and spices. I can’t eat more bread (pre diabetes) and this is the perfect change! Thank you so much

I loved it, but I tweaked the recipe a little bit. I did not use feta cheese or olives. I used Monterey Jack instead because I’m not a fan of seeing the feta or olives chunk. I also used less oil. I used 3 1/2 tbs of pepper-infused grapeseed oil. It came out so good.

I give this recipe credit, the texture is great. However, there is still a “lentil” smell. It’s not bad but if you don’t like lentils it might be off putting. Overall, I think this is a really nice alternative to bread. I had to omit the cheese but I still enjoyed it. Next time I will increase the amount of dill as it didn’t come through as much as I had hoped.

I love this high protein bread recipe as I also need to eat gluten free. I had a question in regards the recipe, when you say two cups of red lentils, soaked overnight would the measurement for the lentils be before, when they are dry, or after they are soaked? I know it can make a little bit of a difference in the recipe. Thank you!

This recipe has some specifics missing such as 2 cups of soaked red lentils overnight become 4 cups the next morning… is it the soaked 2 cups equaling 4 or 1cup soaked to be 2 cups. Because I doubled the soaked lentils to make 2 loves. I assume its the 2 cups that becomes 4 but a reminder of which would have been helpful.
Me and him indoors are on a low carb diet, due to his diabetes. So I became excited finding this recipe. I had no feta or olives so I used cheddar and onion. I am never again eating normal bread with flour and yeast.

Did not enjoy, sorry. Turned out exactly like yours in the picture but it is cakey, not bread at all. A bland dill, feta and olive flavoured cake.
