Anti Inflammatory Cauliflower Chicken Soup
This soup is one of my go-to’s since it takes around 30 minutes to come together. You can also leave out the chicken to make this vegan or vegetarian. It tastes great and you feel great after you eat it!
Whenever I feel like I need a boost of extra vitamins and nutrients, I make this amazing and creamy soup. The ingredients are typically always on hand and the process is completely uninvolved. There is minimal preparation and cooking time.
We have the ginger, turmeric, cauliflower, carrots and garlic as our anti inflammatory components to this dish. Not only are they healthy but flavor packed too. Its a win win soup situation.

Anti Inflammatory Cauliflower Chicken Soup
Ingredients
- 1 tbs olive oil
- 1 small onion, chopped
- 2 carrots, diced
- 5 cloves garlic, minced
- 1 tbs ginger, grated (or paste)
- 1/2 tsp each turmeric + paprika
- 1 tsp dried mint
- salt and pepper to taste
- 1 head cauliflower, florets
- 4 cups low sodium chicken broth
- 2 chicken breasts, cooked + shredded
- garnish: olive oil drizzle + lemon
Instructions
- In a large pot, heat your olive oil on medium. Add in the onion and carrot and saute for 4 minutes. Stir in the garlic and ginger for 30 seconds.
- Add in the turmeric, paprika, dried mint, salt and pepper to taste and stir to coat. Then add in the cauliflower florets and broth, cover the pot, bring to a boil and then reduce to a simmer. Continue cooking for 7 minutes or until the florets are fork tender.
- Using a large slotted spoon, transfer about 80% percent of the cauliflower to a blender and puree for 1 minute or until just smooth. Transfer this back to the pot along with your shredded chicken (if using). Stir to combine all. Taste the soup and adjust the salt if needed.
Thank you for the recipe Stella! This soup is delicious. I was wondering if it freezes well…
Hi Neria, its my pleasure! Yes, freeze away. Its great for that!
Hi,
Made this soup today, really good 😋😋
Hi Hilde! That’s awesome! Thank you for trying it out!
I’ve never put mint in a soup! Would the flavour be fine without it? I’d love to try this recipe.
Hi Jen, You can totally leave it out if you like. Maybe do an Italian Herb blend or oregano or just omit it all together. Will still be awesome! I liked it personally with the mint!
Made it today without mint and added a parsnip. And tobe a total rebel, used an immersion blender! It is amazing.
Hi MArgaret, glad it was enjoyed!
It’s incredible! You described it perfectly. Easy to make, flavours are awesome mixture of spice and mint, chicken makes it a meal. It didn’t need it but I added a splash of cream at the end but would try bit of coconut milk next time. Thank you from a long time soup maker , I will be adding this to my rotation.!
Hi Patti, SO glad you’re adding it to your rotation and thanks for sharing your feedback with everyone about the cream and coconut milk!

Great soup! When I baked the chicken, I roasted a head of garlic and pureed that into the cauliflower… nice addition to the broth.
Could I put the raw chicken breasts in the slow cooker with all of the ingredients, and just let it slow cook for the day. Shred the chicken once it is cooked? Wondering if that would jeopardize the flavours, or enhance? Thanks!
thank you so very much for this recipe stella !!! i’m the farthest away from a ‘cook’ you could find but you made me look like a superstar ! it’s delicious 😛
Hi Michelle, SOrry for the late response but I’m so glad you are a fan of this soup and it worked out so well for you! Cheers to that!
How much is one serving????
One fourth of the soup is a serving
Sooooo delicious! My new favorite soup!
Thank you for the glowing review!!
I LOVE soup, especially soup that is good for you! I’m a great cook, but soup is my nemesis in the kitchen. I can never get it right. But not this time! It turned out amazing and omg so delicious. I am obsessed now with this soup lol and will make it weekly! Thanh you so much for putting out a recipe I can nail!
Hi Sarah, I’m so happy this soup resonated with you and you enjoy it so much! Thanks for the kind review!
So satisfying! Even my picky 8yo liked it!
Hi Laura, that great to hear, thank you for trying out the soup and I’m glad your 8 year old enjoyed it!
hello! are the 16 carbs per serving? or 16 carbs total for the 4 servings?
I was wondering the same. 😊
Hi, am I reading the recipe correct? is it one tbsp of ginger? It completely over powered the dish and seems like a lot.
I haven’t tried the soup yet, but was reading reviews first. I saw your question. I checked and found that 1 TBL of fresh grated ginger is the same as 1/4 TBL ground ginger, because the ground ginger is more concentrated. Not sure which you used. Maybe I will start with a bit less, and can always add more. Thanks for your post.
If you love cauliflower you will LOVE this recipe! I made it for a close friend of mine who is going through chemo for breast cancer and she loved it too.
Hi Kathryn, That’s so sweet of you to make this for your friend! I hope she is doing well and she enjoyed the soup!!
Thanks for this recipe. Loved it can’t wait to make it again. Only one thing, i didn’t purée the cauliflower cause I added the chicken at the same time. Chunky soup still very good 😋
Hi Vicky, Yes, still great even without the pureeing part!! Thanks for the kind review!
Thanks so much for this recipe!! I never imagined cauliflower this way!! It was so good and with lot’s of flavors. My family enjoyed it and we’ll be having it on a regular basis!!
Hi Alicia! Love to hear that your putting the soup in your rotation and the whole family loved it! Thanks for the review!
What did you drizzle on top please
I made this recipe twice already! It is soooo delicious and easy to make. I didnt think my husband was going to like it but to my surprise he loved it and asked when I was making it again! thanks for the recipe.
Fantastic! Glad its on repeat in your home and the hubs enjoyed it too!
I’ve made so many of your recipes and loved them all – this is definitely one of my favorites!
I made this soup because it felt like I was starting to come down with some kind of bug or illness, so I thought I’d try that anti-inflammatory goodness 🙂 I always drink ginger tea when I’m not feeling my best, so adding it to soup sounded like a great idea. The soup was delicious and satisfying (so creamy without cream!) and it did feel like I got a boost from it. My husband loved it too and he hates most veggies. I’m now adding cauliflower to other soups to make them creamier and it’s a game changer. Thanks for sharing your recipes, they are great.
Very good, made it on a cold Wisconsin night and it hit the spot.
Delicious! Can’t wait to make it again!
What is the purpose of mint for this meal? It looks delicious.
this soup was very tasty. I will make it again. I shared it with some friends and they liked it too. 👍👍

Can I do this in my slow cooker?
Hi Kelly,
Should definitely work in the slow cooker!
Can I use frozen cauliflower in place of fresh here? Thanks!
Hi Aimee, definitely yes!

Hi Alisa, glad you both enjoyed the soup! Thank you for the kind rating too!
This is an easy and delicious soup. So much flavor with opportunity to customize! I added a couple handfuls of fresh baby spinach at the end with a pinch of pepper flakes. It was very creamy from the blended cauliflower so didn’t feel the need to add milk of any kind.
Thanks Stella for your awesome recipes!!!
HI Kay, glad you liked the soup and thanks for sharing your feedback on it!
This soup is OUT OF THIS WORLD!!!!! I just came home from 4 months of eating and drinking way too much in Maine. Time to hunker down and get healthy and detox. Found this recipe and made it last night for dinner….so clean, tasty and extremely satisfying. I have already passed it along to my closest friends who love clean food. Thank you Hungry Happens….will be exploring more of your recipes, that’s for sure!

it’s very tasty and you really fell better afterward :), I didn’t have a blender so I use the bottom of a glass to mash the cauliflower and it was still good
HI Flavia, glad you liked it and thats the perfect hack for lack of blender – love it!
This soup is delicious! It just became my favorite. I did not put mint in it, I am not a fan of that , but this was great. Thanks so much!

Love this soup! A friend made it for me after surgery and it is so soothing, flavorful, comforting & nourishing. I look forward to making it myself in the future and shared the recipe with my favorite people. It doesn’t look impressive but it tastes incredible!
Hi Tracy, Glad you liked the soup and hope you’re recovering well! Thanks also for coming back to rate it!
We LOVE this soup!! I use more carrots, a whole head of chopped garlic. A nice chunk of fresh grated ginger and Wow! I don’t have tumeric or mint, so I’ve never missed it. Thanks for a beautiful and super healthy recipe!!
HI Becky, Glad you liked the soup! And thanks for trying it out!
The soup is delicious! I almost left out the mint but I am glad I didn’t, it adds a subtle but wonderful flavor. I just cut open a mint tea bag and use that. Also I used Kettle and Fire ginger tumeric bone broth for extra protein and flavor. This will be in regular rotation!
HI Tawnie, Sounds amazing with your tips! Thanks for sharing them with us and I’m glad you enjoyed the soup!
This was so delicious! I love the subtle flavor of mint. Overall, a big winner in our house!
Hi Meg, Glad you tried it and liked it – thanks for the kind rating!
Would it be okay to add some broccoli along with the cauliflower?
Hi Joanne, yes! The more the merrier!
I made the soup for dinner last night. It is absolutely outstanding! My husband and family loved it so much, they asked for an encore tonight, so I obliged them! Delicious! I will be making this often!
Thank you. God’s blessings on you 🥰
Hi Donna, bless you and your family too! thanks for the kind message and I’m glad it was a hit with everyone in the family!
Just curious how everyone would cook the chicken if using in this soup? I want to try it . Sounds very good!
HI Deb, you can cook it in a pan or bake it in the oven and then shred it. Season it of course…
Absolutely delicious! Very flavorful and fresh, still healthy and creamy with putting some of the cauliflower in the blender. All the veggies cooked up nicely. my husband couldn’t stop raving about it , he had 2 big bowls
HI Kim, that’s so amazing! Glad it was a hit with the hubby too! thanks for taking the time to come back and rate the dish!
This was so delicious! I did not add chicken and it was still a hit. I love curry so I subbed curry powder for the turmeric. I served it over brown rice too. My husband gave it a 10! We ate it on a freezing winter day and it did not dissapoint
HI Suzy, Sounds amazing over rice and i’m glad the family enjoyed too!
Looking forward to making this soup! Couldn’t find dried mint anywhere, is it OK to us fresh and if so how much?
Hi Deborah, yes sure, at the end use 1 tbs
Delicious. I didn’t have mint but it’s great without
HI Kimberley, glad you liked the soup! thanks for leaving the kind feedback!
