Baked Spanakopita Tortilla
Its no secret that spinach pie (aka spanakopita) is my love language. I grew up eating it all the time, homemade, everything from scratch. My family never used store bought phyllo. And it was the bomb to say the least. Indescribable. I, however love to create simple recipes that aren’t as time consuming but are still really delicious.
Make sure you pick up a large burrito sized tortilla, flour, low carb, spinach; any kind you prefer. My baking dish was 10×7 inches in size and I baked it in my mini convection oven.

Baked Spanakopita Tortilla
Ingredients
- 1 large burrito size tortilla
- 1 tbs olive oil
- 2 handfuls baby spinach, rough chop
- 2 scallions, chopped
- salt and pepper to taste
- 2 tbs dill, chopped
- 3 eggs
- 1 oz feta cheese, crumbled
- 1 handful shredded mozzarella cheese
- garnish: chili pepper flakes
Instructions
- Preheat your oven to 400° F. Lightly spray a small baking dish with olive oil. My dish was 10×7 inches.
- In a skillet, heat the olive oil and saute your scallions for 1 minute. Add in the baby spinach and toss to mostly wilt. Season with salt and pepper to taste. Stir in the dill and remove from pan. Pat dry with paper towel to remove any excess moisture.
- Place the tortilla into the dish with the edges coming up against the sides of the dish. Add in the eggs and season with salt and pepper to taste. Spread out the spinach mixture over the whites, crumble on the feta and the mozzarella cheese. Bake for 17-20 minutes or until set to your desired doneness. Remove from the pan and slice in half or quarters. Top with chili pepper flakes and enjoy.
it works so much better with a pie plate. for variety, go with ham and cheese with sliced jalapenos, or by adding sausage. many variations. very popular here.
Very good and easy go to. I can’t believe I’m saying this but in might have added a little to much cheese. I also covered up yolks. I will be making this again. Thank you for sharing your recipes.

I’ve got a little Hungry Happens Marathon going on, Stella. This is the 5th recipe of yours that I’ve made and they have all been outstanding!! My (s/w food snobbish) husband has given his enthusiastic stamp of approval, too.
I used 2 almond flour tortillas, doubled the spinach, added half a small clove of garlic slivers only used 2 eggs and baked it in the air fryer oven on the bake setting at 375 for 11 min and it was wonderfully soft and gooey!! Great flavors!! I only had an old tired bottle of dried dill on hand, and it was still tasty can’t wait to try it w/ fresh dill!!

This was SOOOOO GOOD!!! Quick and easy to make as well. I used two tortillas and the same amount of filling except I added one egg and scrambled the eggs. Split it with my daughter. We loved it. Will make it again tomorrow!! (I topped mine with some chopped kalamata olives too! I am making that yogurt cake soon – looks yummy!!

You can also wrap the Spanakopita ingredients in small individual tortilla’s and bake! Make sure to rub the outside of the tortillas with olive oil.

This recipe was delicious! I didn’t have dill so just did it without and used a low carb tortilla and baked for 20 minutes at 400 and was perfect. My only recommendation is for next time I might mix the egg because I got some bites with just egg whites and then some that were all yolk so may be nice to mix it up some. Otherwise loved the recipe

I made this today and it was so delicious! Exactly the type of thing I love. I made it exactly as instructed. I am definitely going to make it for my college aged kids when they come home. I also want to try adding different veggies sometimes like yellow onion or roasted tomatoes.

I made this tonight for dinner…turned out great – I used 2 flour tortillas in a 10 x 7 baking dish..I mixed the eggs together, I added fresh garlic and more spinach…turned out yummy…have some leftover for lunch tomorrow! Thanks for the recipe.

Excellent and so very easy. I sautéed garlic with some chopped onions which I substituted for the scallions since I didn’t have any on hand. I also substituted goat cheese for feta since I was out of feta. I will definitely make this again. Also, I scrambled the eggs. YUM.
