Broccoli Feta Fritters
It’s all green to me with these broccoli recipes. I could eat these endlessly. This is one of my Original recipes I recreated and updated to share with my new friends on TikTok, etc. You can’t go wrong with this recipe. If you have some broccoli in your fridge, I urge you to create these! They’re great for breakfast, lunch, side dish, appetizer or snack time!
Ingredients:
Super basic ingredients in this one with gluten free substitutes too. For the all purpose flour you can sub in oat flour, almond flour or gluten free flour. It might need a tad bit more but mix it with the measurements below and you can always add in an extra tablespoon of flour if needed to bring the batter together.
The eggs are the main binder here and I’m not sure if the mixture would hold together with a substitute like flax eggs. If you don’t like feta, you can simply add in more mozzarella cheese. If you don’t like dill, sub in chives or basil. Serves perfect with some Tsatziki Sauce (although I enjoy them on their own).
The mixture might feel like it’s not coming together because of the broccoli chunks, but once you get it in the pan, it will converge and cook into a perfect fritter thanks to the cheese and eggs.

Broccoli Feta Fritters
Equipment
Ingredients
- 4 small crowns broccoli
- 3 eggs, lightly beaten
- 5 tbs all purpose flour *
- 1/3 cup mozzarella shredded
- 3 oz feta cheese, crumbled
- 2 cloves garlic, minced
- 3 tbs dill, chopped
- 1 tsp onion powder
- 1/2 tsp chili pepper flakes
- salt and pepper to taste
- Optional Dip: Lazy Tzatziki
Instructions
- Steam your broccoli crowns in about 1 inch of water for 7 minutes or until fork tender. Remove to paper towel and allow to cool slightly. Pat dry with towel. Next chop them into tiny pieces.
- In a large bowl, combine everything until incorporated. Form large balls.
- In a large skillet, heat 2-3 tbs olive oil until hot. Add the broccoli balls and flatten them out a little. Lower heat to medium and cook for 6 minutes. Flip them over and flatten them again with the back of your spatula. Cook another 6 minutes. Lower heat if they are getting too dark brown. You want them golden brown.

Thanks for this! Made them today – swapped feta for Parmesan, used buckwheat flour to make them GF and added nutritional yeast. Made your tzatziki and it was amazing together. Can I just say I really am not a good cook and I was so happy this turned out! Even 3 carnivores in the house liked them!
First batch I followed the recipe exactly and they all fell apart. Then I added one extra egg and 3/4 tbs of tapioca starch flour and they stuck! Really delicious in the end!

just made these, soooo good.. my only alteration was i flattened them in some bread crumbs before frying in a skillet.. only because my hubby doesn’t like browned cheese.. i know, there IS something wrong with him.. heh..

I found frozen broccoli rice recently which would work great in this recipe for those who need soft foods as well as toddlers, etc. I’m actually collecting recipes for people on soft food diets and this will be one of them with a few tweaks. Thank you!!

Hi Stella! I loved the flavor but they stuck to the pan sooo badly that they fell apart. I used frozen instead of fresh broccoli, drained and blotted on paper towels. I also used a stainless steel pan. Can you offer any advice to keep them from sticking? Thanks in advance!
This was really good! I love the flavors. Something I had a tough time with was the fact that my fritters fell apart in the pan. I used almond flour not sure if this impacted the consistency. Any tips/advice for when I make it next time? Thank you!
