Crispy Flourless Chickpea Crackers
You will find that most chickpea cracker recipes use chickpea flour. Since chickpea flour is not commonly found in markets, we decided to use canned chickpeas instead. These crackers are yummy, easy, healthy with a great crispy texture.
First you will start by pulsing the chickpeas and egg until smooth. Next you will transfer the mixture to your 9×13 inch baking sheet. Make sure to spread it out thinly and evenly. This ensures a crispy cracker texture.
All the flavor in these crispy chips comes from the chia seed topping. Just grab a bowl and mix together chia seeds, water, oil, mustard and your favorite spices. We picked, salt, paprika, onion powder and garlic powder. Its finished off with some shredded parmesan cheeses and baked until golden brown on top. I also recommend cooking these in your air fryer for crispiest results. Obviously, lessen the time by half if you are using an air fryer.
These serve really well with some whipped cream cheese or my Lazy Tzatziki Dip or my 5 Minute High Protein Avocado Dip or my Greek Cottage Cheese Dip.

Crispy Chickpea Crackers
Ingredients
- 15 oz can chickpeas, drain, rinse + pat dry
- 1 egg
Chia Seed Mixture:
- 3 tbs chia seeds
- 2 tbs water
- 2 tbs olive oil
- 1 tbs dijon mustard
- 1/2 tsp each salt, garlic powder, onion powder + paprika
- 2 tbs shredded parmesan cheese
Instructions
Crackers:
- Preheat oven to 400℉. Line a 9×13 inch baking sheet with parchment paper.
- In a mini food processor, pulse together chickpeas and egg until completely smooth. Transfer mixture onto the baking sheet and spread out thinly and evenly.
Topping:
- In a small bowl, add in the chia seeds, 2 tbs water, olive oil, mustard and spices and mix together until combined. Evenly spread this mixture on top of chickpea mixture. Sprinkle top with parmesan cheese and divide into small squares with a bench scraper or knife. Bake for 30 minutes or until golden brown on top. Allow to cool for 15 minutes. Separate the crackers and serve.

- Store leftovers in an airtight container in the fridge.

I’m not very fond of the taste of chickpeas and I’d like to try adding onion powder and garlic powder to chickpea egg mix for not such a layered taste. That would work wouldn’t it?

Will these still work if spread thinner? Yours look to about 1/4 inch…so 1/8th inch? cooking time less? temp less?
Hi Jane, should work yes. I would watch the time at around 20 minutes…. start to watch them so they dont burn
1st try failed so I can’t have that cracker defeat me. 2nd try went much better, I found out my oven isn’t calibrated correctly. Try #3 oh yes!! I love them so much!!
