Blueberry Lemon Dutch Baby
Ingredients
- 4 eggs
- 1/2 cup milk, of choice
- 2 tbs maple syrup, or honey
- 1 tbs olive oil
- 1 lemon,, zested
- 1 tsp vanilla extract
- 1/4 tsp salt
- 3/4 cup almond flour
- 1 tbs butter
- 1 cup blueberries
Powdered Sugar, Honey or Maple Syrup to serve
Instructions
- Preheat oven to 450℉.
- In a large bowl, whisk together the eggs, milk, maple syrup, olive oil, lemon zest and vanilla WELL. Add in the salt and almond flour and mix to combine.
- In a medium oven safe skillet, melt your butter. And then drop in your blueberries. Once the pan is hot, pour in the batter. Transfer the pan to your oven and bake for 16-18 minutes. Let it set on the counter for 5-10 minutes then slice and serve. Sprinkle with powdered sugar, maple syrup or honey and serve!
. my inbox today! It came out delicious! I used mixed berries for mine. I didn’t have a medium size like we’re saying they can go from the stove top to the oven so I used my large one. It came out thinner than it was supposed to be, but I think I preferred that. Even my husband who is not gluten-free or sugar-free had a slice after eating his soutsoukakia and orzo, and really loved it enjoyed it! He was pleasantly surprised. You say milk, butter, put in blueberries and then once the pan is hot at the butter. Why? Wouldn’t it be better to add the berries and batter into the hot pan?
15 minutes in my oven is all that is needed. I did 17 so the edges slightly burned. Still came out nice. Easy to put together. Place in oven. Yum. So good! Thank you

Really wonderful recipe and easy to make! I added about a teaspoon of pure lemon extract to the recipe since we like lemon, but other than that, I followed the recipe using keto maple syrup. This was a great dessert/breakfast find for me since I can’t have sugar (and I’m very new to trying to substitute monk fruit so I don’t have sweets at all). My husband loved it! Thank you Stella!

CanI make this in an oven safe pie dish? I don’t have an oven safe fry pan. I could make this in a frying pan and then transfer it to a pie pan. Would that work?

I made this the other morning. I had frozen Wyman’s blueberries on hand. I happened to have all the ingredients on hand. I ABSOLUTELY LOVED IT! So easy to make, so simple and delicious! I honestly didn’t even need anything to top it with. I put a tiny bit of organic bourbon barrel maple syrup and a tiny sprinkle of organic powdered sugar on my husband’s.
