Easy Boursin Vegetable Bake (Low Carb)
This vegetable bake, featuring creamy Boursin cheese, is an effortless side dish that comes together in a single pan. A medley of your favorite vegetables, such as cherry tomatoes, cauliflower, zucchini, garlic and onions, are tossed with olive oil and seasonings.
The star of this simple vegetable bake is undoubtedly the Boursin cheese. Typically we use a garlic and herb variety, but they have so many amazing options. Placed directly into the pan with the vegetables, it slowly softens and later infuses its rich, garlicky, and herbaceous flavor throughout the dish.
The Boursin vegetable bake’s minimal cleanup and incredible flavor make it a go-to recipe. The combination of perfectly roasted, melt-in-your-mouth vegetables and the decadent, herbed Boursin cheese offers a sophisticated yet approachable experience that’s sure to be a hit.

Easy Boursin Vegetable Bake

Ingredients
- 1 small head cauliflower, cut into very small florets
- 1 small onion, sliced thin
- 7 oz cherry tomatoes
- 1 large zucchini, cut into thick half moons
- 2 cloves garlic, minced
- 1/3 cup olive oil
- 1 tsp each salt, garlic powder, onion powder + Italian herb blend
- black pepper, to taste
- 5 oz Boursin cheese
Instructions
- Preheat oven to 425℉.
- In the 9×13 inch baking dish, add in the cauliflower florets, onion, tomatoes, zucchini, garlic, olive oil, salt, garlic powder, onion powder, Italian herb blend, pepper and mix together until all is coated. Spread out evenly. Next, add in the Boursin in the middle and drizzle with olive oil. Bake for 35-40 minutes or until golden brown on top and cauliflower is fork tender. Mix it all together and serve immediately.
Notes
- Store leftovers in an airtight container in the fridge.
- If you don’t have Boursin cheese, you can sub it in with Feta.
- You can also add pasta to this dish or shredded rotisserie chicken to make it a complete meal.
- I love to eat any leftovers warmed in a pan with some scrambled eggs mixed in.
