Easy Chicken Pesto Meatballs
I can’t get enough of these juicy flavor packed meatballs!
This recipe is absolutely simple to throw together with very few ingredients. A dinner that makes your life easier and tastes great is such a blessing. I typically buy my pesto since the one I get is unparalleled in flavor. Why make my own? The Gotham Greens brand sold at Whole Foods is unbeatable.
Feel free to use any type of ground meat here. I have also made these with ground turkey. Just make sure you don’t use the extra lean ground meat, it will produce very stiff meatballs and we definitely don’t want that. Panko also makes these fluffier although feel free to substitute in regular bread crumbs. I typically double this recipe for meal prep purposes. They warm up great in the my toaster oven. Serve this with salad for a yummy dinner!

Excellent recipe with pasta or spaghetti squash. Very easy. Highly recommend.
Hi Anderson, thanks for trying them!
These are delicious! It’s a fresher, lighter take on meatballs. Great with noodles in a cream sauce!
Hi Jen, thanks for the kind feedback!
I was intrigued by these! I haven’t done much with ground chicken and I thought about subbing ground turkey, but I’m a purist the first time I make a recipe. I’ll probably try it next time, as ground turkey is much cheaper.
These turned out delicious! I loved the flavors. I paired it with noodles in an alfredo sauce and my family thought it was pretty good together.
So easy and delicious! I make traditional meatballs all the time, but somehow these came out much more perfectly round than my beef/pork/veal ones ever do 😂 for extra browning, I added a couple tablespoons of EVOO to the meat mix before forming the balls. Otherwise followed this great recipe exactly.
Literally just cooking my way through your blog and enjoying every recipe along the way. Made these tonight and they are so yummy. I made my own pesto with cilantro and basil from my garden and use ground turkey and they were so yummy. Thanks for another amazing recipe!
