Healthier Cottage Cheese Banana Bread
Bump up your protein with this delicious cottage cheese banana bread!
Cottage cheese has been all the rage the past year plus and we have been totally on board with that trend. It lends a beautiful, soft texture to the banana bread similar to yogurt or sour cream.
Its a bit healthier by our use of almond flour and oat flour instead of traditional all purpose flour. Also we are leaving out the granulated sugar and opting for a limited amount of maple syrup. Let’s let the bananas do the work.

Healthier Cottage Cheese Banana Bread

Ingredients
- 2 eggs, lightly beaten
- 4 small bananas
- 1/4 cup olive oil
- 1/4 cup maple syrup (or honey)
- 1/2 cup cottage cheese, drained
- 1 tsp vanilla extract
- 1¼ cup oat flour
- 3/4 cup almond flour
- 1 tsp cinnamon
- 1½ tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat the oven to 350℉. Line an 8×4 inch loaf pan with parchment paper.
- To a large bowl, add the eggs and bananas, mash with a fork. Add in the oil, maple syrup, cottage cheese and vanilla extract and whisk together. Next add in the oat flour, almond flour, cinnamon, baking powder, baking soda and salt. Fold it all in until a thick batter forms and no more flour is visible. Transfer the batter to your pan and bake for about 45-55 minutes or when toothpick comes out clean. Cover the pan loosely with foil if the loaf starts to get too brown on top. Allow the bread to set in the pan for about 10 minutes then transfer to a wire rack to fully cool before slicing.
Notes
Make sure your oat flour is gluten free to keep this a gluten free recipe.

This is the first recipe I made from you and It was super delicious I loved it!! But it did turned super brown from the top…next time I will use the foil as you recommended. I only have one question…the nutrition facts you mentioned at the end of the recipe are from one piece or the whole bread ?

Came out fabulous. I made my own oat flour with Organic rolled oats in my Vitamix and sifted it as well as sifting the almond flour.I used Whole Milk cottage cheese. I did not use any parchment paper instead I greased a disposable foil loaf pan with unsalted butter. I added sugar free stevia sweetened chocolate chips Lily’s which I purchased at Target. They have a huge baking section believe it or not.

Can you give an approximate for the amount of mashed banana? Not sure how big a “small” banana is?

These were deliciously moist with just the right amount of sweetness. I made mine as 12 muffins and added a some walnuts, dark chocolate chips, and raisins.
