Herb Chicken and Halloumi Salad
This salad includes one of my favorite all time cheeses: Halloumi. Halloumi’s origin is from Cyprus but is known around the world. It’s got a hard almost rubbery texture which makes it ideal for keeping its shape and structure for grilling. The herb chicken is a great recipe for any occasion but pairs beautifully withe halloumi and other salad ingredients.
Herb chicken
The herb chicken is the best because its easy and flavorful. Simply drizzled with olive oil and a dried herb spice mixture. Pop it in the oven for 20-25 minutes and proceed with the salad prep.
The real star of this salad is of course the Halloumi cheese. It fries up in no time in a small pan and really has a delicious salty flavor to the salad. I recommend searing this cheese as the last step of the salad process since you want to serve it up warmish. I also added sweet potato to the salad to pair nicely with the saltiness of the Halloumi.

Herb Chicken and Halloumi Salad
Ingredients
Herb Chicken:
- 3 boneless, skinless chicken breasts
- 2 tbs olive oil
- 3/4 tsp each garlic powder + onion powder
- 3 tsp Italian Herb blend seasoning
- salt and pepper to taste
Salad:
- 4 cups mixed greens
- 1 small head radicchio, sliced thin
- 1 large roasted sweet potato, diced
- 1 large avocado, sliced
- 5 oz sweet peppers, halved
- 2 tbs sesame seeds
Halloumi:
- 1 tbs olive oil
- 10 oz halloumi cheese, sliced 1/2 inch thick
Instructions
Chicken:
- Preheat oven to 425 F. Pat dry your chicken pieces. Coat them in the oil. Then season both sides in the herb mixture. Transfer to a baking dish and roast for 20-25 minutes (time varies with thickness of meat).
Dressing:
- Whisk together all the ingredients and taste. Adjust anything to your palate.
Salad:
- Prep your salad ingredients first then leave the Halloumi for last. You want it to be warm when served.
Halloumi:
- In a medium pan, heat the olive oil on medium heat. Once it gets hot, add in the cheese slices and cook for 1 to 2 minutes per side or until golden brown. Transfer to a plate and serve with your salad.
