This recipe is beyond simple with only 3 ingredients. The lemon flavor stands out along with the white chocolate. You won’t regret making these little treats.

This recipe was adapted from Kirbie’s Cravings.com You can also use sugar free white chocolate to make this low carb. The lemon flavor make sure you use plenty of lemon zest and at least 2 tablespoons of lemon juice.

3 Ingredient No Bake Lemon Cookies
A quick and yummy no bake lemon cookie for that after dinner sweet craving.
Ingredients
- 2 cups (360 g) white chocolate chips
- 1 large lemon,, zested + juiced
- 1 cup (93 g) unsweetened shredded coconut
Instructions
- Melt your chocolate chips in a small pot, over low heat, stirring constantly, until smooth and melted. Remove the pot from the cooktop and squeeze in the lemon juice. Stir it into the chocolate for a minute until smooth (will separate initially but keep stirring until smooth). Lastly mix in the lemon zest and coconut shreds until fully incorporated. Scoo
- Line two half sheet pans with parchment paper. Scoop about 1ยฝ tablespoons onto the sheets and spread out slightly to a flattened cookie shape. I used the back of my spoon. Top each cookie with more lemon zest. Refrigerate the cookies for 1 hour then store leftovers in the fridge.
Notes
You will need 2 tablespoons lemon juice.

Can I use dark chocolate instead of white chocolate?
Just made these with white chocolate chips, unsweetened coconut chips and juice and lemon zest from 1/2 large lemon. These are delicious! They harden in the refrigerator and are almost like having a piece of candy!
