These no bake blueberry breakfast bars are healthy oatmeal bars with a juicy sweet blueberry homemade jam and crunchy oatmeal crumble on top!
All you need is 5 simple ingredients to make this delicious no bake breakfast snack bar. Way better than buying prepackaged granola bars from the supermarket! They come together in 15 minutes. You just need to give them some time in the fridge to set!

The filling is super easy to make with just blueberries and water. Just cook the fruit down but don’t completely mash it up – leave some pieces whole. You can also add a drop or two of maple syrup while its cooking to sweeten it more – but I didn’t.

You can use any nut butter like almond butter or sunflower seed butter to make this! You can also use any liquid sweetener like honey instead of maple syrup.

No Bake Blueberry Oat Bars (5 Ingredients)
Ingredients
- 1 heaping cup (148 g) blueberries
- 1/4 cup (10.75 ml) water
- 1/3 cup (86 g) all natural peanut butter
- 1/3 cup (107.33 g) maple syrup
- 2 tbs coconut oil
- 1 cup (81.08 g) rolled oats
- 1 cup (120 g) oat flour
Instructions
- Line an 8×4 inch loaf pan with parchment paper or grease loaf pan with cooking spray.
- In a medium skillet over medium heat, add in your blueberries, water and simmer for 7 minutes. Gently smash half of the blueberries.
- In a large bowl, add in peanut butter, maple syrup, coconut oil, oats, oat flour and mix together until combined. Transfer 2/3 the oat mixture to the loaf pan and spread out evenly. Next add on the blueberry mixture on top and spread out evenly – leaving a slight border. Then add the remaining oat mixture on top and spread out evenly. Chill for 2 hours or overnight. Slice and serve.
Notes
- Store leftovers in an airtight container in the fridge.
- If you are gluten intolerant, you can use gluten free oats.
- You can use any liquid sweetener like honey.
- Use any neutral oil, like olive oil, avocado oil or melted butter.
Maybe I used all kinds of different stuff so I didn’t get as good results?! I couldn’t find my bag of plain oats so I used granola sweetened with maple syrup. Couldn’t mill my own oats for the flour part so I used glutinous rice flour but only added enough flour to make 1 cup after the Orgain protein powder that I used. Used agave syrup instead of the maple syrup because I was too lazy to dig for the maple syrup. Because granola was already sweetened, I added just 3 tablespoons of the agave syrup; guestimated 1/3 cup of my Jif creamy PB. Cooked the heaping cup of frozen blueberries in the water. So bars were good but had to be eaten with a spoon in a bowl. Still good but PB was overpowering. I think I’ll use almond butter instead next time. And yes, it will be repeated with other fruits here. Usually apples. Thanks for sharing this!
Stella, this bar recipe made me mom of the year for about a week! It was delicious. I had to use frozen cherries instead of blueberries bc I did not have any but that moved the whole recipe into cherry almond flavor profile-land and it worked! Added some almond extract to the cherries after cooking and used cashew butter instead of peanut butter bc it was more neutral. I would have used almond butter but none on hand. For the coconut oil I used melted coconut butter to ensure it would stay firm. I wasn’t sure if the cherry:blueberry sub would hold up in terms of stability for the bar once cooked so the coconut butter added some firmness. Really lovely recipe! Thank you!

this is a recipe I do over & over! I follow recipe quite closely I just add about 1/4 cup of ground flex seed and my cup of blueberries is very generous. I like to end with blueberries on top. I divide the amount in 4 cups and just top with the cooked blueberries. I cover and I have 4 breakfasts on the go ready. Sometimes I top with a bit of Kefir or yoghurt, it really comes good.

Not in no bake recipes. Regular flour must be cooked. i recommend oat or almond flours
You can bake AP flour before using in this recipe. Personally, I like oat flour though.

I just made these, and wow so easy and divine. I will be making these over and over. I will pack them as a great healthy replenishment after working outdoors in the environment with wildlife. They will also make a great gift packaged up pretty.
These are so easy and off the chart! I made a batch a took to my office this morning. Needless to say they were devoured!!! The only thing I added was a sprinkle of cinnamon to the blueberries. I make blueberry pie and trust me it adds a nice flavor.
