One Pan Chicken and Cabbage
An incredibly simple, healthy and delicious way to serve your chicken and veggies.
If you love easy delicious meals that come together in one pan – you are currently in the right spot. My entire family loved this dish and I loved making it. It’s gluten free and has the protein and veggies come together in one pan for easy clean up.
If you don’t have green cabbage, you can use red/purple cabbage but the end result of color will change. You can also use chicken breasts instead of thighs if that’s what you have.

One Pan Chicken and Cabbage
Ingredients
- 1½ lbs boneless skinless chicken thighs
- salt, onion powder, garlic powder + paprika
- 3 tbs olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 tbs tomato paste
- 1 medium head green cabbage, sliced thin
- 2 medium carrots, coarsely grated
- 1½ cups low sodium chicken broth
- 2 tsp paprika
- salt and pepper to taste
- garnish: fresh parsley
Instructions
- Cut your chicken into small pieces. Season them generously with salt, onion powder and garlic powder.
- In a large deep skillet, heat the oil. Once hot, add in the chicken and cook for 6 minutes – or until browned on both sides. Next add in the onion and saute for 2 minutes. Stir in the garlic for 30 seconds and then the tomato paste too.
- Next mix in the cabbage shreds for a minute or two until coated and slightly wilted down, then mix in the carrot shreds and then finally add in the broth and seasonings. Bring to a simmer and lower the heat to continue the simmer cook, stirring occasionaly, for about 10-15 minutes or until the liquid has evaporated. Top with parsley and enjoy!

Does it matter if you use Savoy as opposed to normal cabbage?
I find Savoy cabbage is finer in texture.
Would anything change as far as cooking is concerned?

This recipe was really, really good. I only used half of the cabbage–maybe I bought one that was too big? I struggled to get it all in the pot. I served it over egg noodles.

Just know that the cabbage cooks down. It may seem like too much for the pan, but it always reduces in volume!
Love all your recipes, but have not tried this yet. Can you use chicken breasts cut up in small pieces? Does that affect cooking time?

This was very good. Remindeded me of something you might stuff a squash with. I did add about half cup of rice 2 teaspoons of sugar and dried sage to taste. It’s a keeper.
I have a question about the seasonings. It appears they are applied to the chicken. But the final step says to mix in the seasoning. Are you also putting the same seasonings in the simmering pot?
This was a big hit! May add some small cubed potatoes next time.

There are no measurements for the seasonings and instructions are a bit vague for when to add them.
Quick and easy to make. Absolutely delicious! This meal went down really well with the men in my household, despite their initial scepticism about the lack of carbs – perfectly substantial.

Hi Jess, if i had to guess amounts – 1/2-1 tsp of each. I have a rule of thumb – 1 tsp salt per 1 lb of meat
Delicious! I only started to enjoy cabbage a few years ago as Cole slaw. This is my first time eating a meal with cooked cabbage and I loved it. I also made it with cut chicken breasts and it came out delicious.
